Centrepiece

The arrangement in the middle of the table, of flowers, candles or seasonal elements. It gives the room character but must not divide guests.

The centrepiece (in Italian, centrotavola) is the element in the middle of each table: flowers, candles, fruit, branches, lanterns. It is part of the mise en place and sets the tone of the room, with one practical rule: guests must be able to see and talk to each other. Low arrangements are better, or tall but slender ones.

It must also leave room for bottles, bread and oil cruets, and for plates to be passed. Outdoors, think about the wind: no open candles and light arrangements. Seasonal elements are easier to find and go with the menu. On the buffet, flowers must not touch the food or drop petals or pollen.

Who makes it

Usually a florist; sometimes the caterer, as an extra. Either way, put the two in touch before the event, decide who sets up and who takes down, and show both the same photos. Ideas in the guide on flowers and centrepieces and the one on table styles.

Frequently asked questions

Is the centrepiece included in the catering price?

Rarely. It is often an extra or the florist's job: ask in the quote.

How tall should a centrepiece be?

Low enough not to hide faces, or tall and slender like a candelabra. What matters is that guests can see each other.
