There are two ways to have sushi at an event: boats or platters prepared in a kitchen and delivered, or a sushi chef preparing it in front of the guests. The first is simpler and more affordable, suited to house parties and drinks; the second is show cooking, ideal as a food station at a wedding or corporate event, but it needs space, a counter and more time.
With raw fish, safety comes first. Fish to be eaten raw must be blast-chilled in line with hygiene rules, and must travel and stay at the right temperature until it is served. Ask the caterer how it transports the sushi, how long it can stay on display and who checks it during the event.
The price depends on the number of pieces per person, the type of fish (salmon and tuna are priced differently from amberjack or prawns), whether there is a sushi chef and the duration. A sushi chef on site costs more than a delivery, because you also pay for their time and the set-up. Always ask how many pieces are included. For the other items, read the guide how much catering costs in Rome.
A sushi chef needs a work counter, a refrigerated surface and often a power socket. Outdoors, in Rome's summer heat, you need shade and a shorter service. Think too about guests who don't eat raw fish: ask for cooked or vegetarian pieces, or a different alternative. Sushi can sit alongside traditional catering as a station during the aperitivo.
If there are lots of guests, consider several stations or a mix of a sushi chef and ready-made platters: one sushi chef cannot serve large numbers quickly and queues build up. Ask the caterer how many people it can serve per hour and plan the service accordingly, perhaps limiting the show cooking to the drinks reception.
Have the number of pieces, variety, type of fish and whether the sushi chef is included put in writing. Ask how they handle blast-chilling and the cold chain, which allergens are present (fish, crustaceans, soya, sesame, gluten in the sauce) and whether they have gluten-free soy sauce. Then request up to 3 quotes.
It depends on whether sushi is the main meal or a station at the drinks reception. Tell the caterer the role of the sushi and the duration to get the right quantity.
