The carving station is a station dedicated to meat carved to order. A skilled staff member portions a roast beef, a porchetta, a turkey or a baked ham in front of the guests, with bread and sauces alongside. It works at a long aperitivo, at wedding buffets and at corporate parties.
It is a station that needs equipment: board, knives, lamps or hot plates to keep the meat at temperature. Place it where the queue does not block the way. As carving takes time, the number of guests per station matters more than the amount of meat.
What to ask
Ask which meats the caterer offers, how many grams per person it plans and who carves. Always plan an alternative for those who do not eat pork or meat, and flag guests who follow a kosher or halal diet. Everything is in the guide to the carving station and the one on buffet stations.
