Plan B is the alternative for an outdoor event when the weather does not cooperate: rain, wind, too much heat. It is not a vague idea, it is a specific place (an indoor room, a portico, a marquee) with a time by which to decide.
It has to be decided and booked in advance, not on the morning of the event. A hired marquee often has to be reserved anyway, because in the busiest months it is hard to find one at the last minute. Heat is a plan B too: shade, water, times moved towards evening and buffets protected from the sun.
What to write in the contract
Where the service moves, who puts up the cover and what it costs, by when the decision is made and who makes it: you, the caterer or the venue. Ask during the site visit. Find out more in the guides to outdoor catering and to marquees and gazebos.
