The rinfresco is a light buffet offered after a ceremony or at a celebration: christenings, first communions, graduations, openings. It is usually eaten standing, with savoury and sweet finger food, cake and drinks. Timing decides a lot: a ceremony at the end of the morning leads to lunch, one in the afternoon to a rinfresco.
Quantities change if the rinfresco replaces a meal: in that case guides suggest figures similar to an apericena, plus a margin. With guests of all ages you need seating for older people and something simple for children. At home, decide early between delivery only and catering with staff.
What to ask
Ask how many pieces per person the caterer plans, whether cake and drinks are included, whether there are staff and who takes away tableware and rubbish. Formats and examples in the guide to the christening rinfresco and in the sample menus for private parties.
